Just read Gwinnie’s cookbook and here’s what I need to get started:

I love her cookbook tho strictly for inspiration. I’ve re-created my own versions of several of her recipes using less time/$/calories… for instance, savory rice bowl using Trader Joes instant rice in a single serving pack… just cook the rice in microwave 1/2 way, add soy sauce and sesame oil and a tablespoon of water… nuke again… then toss with the rest of ingredients. (If you don’t have kimchee handy use garlic and greens like bok choy or kale and a splash of umeboshi plum vinegar.)

For the pizza- get fresh dough from your local “fancy” grocery and you can absolutely make these in the oven. I heat oven with the baking sheet already in it and prepare pizza on parchment paper before i transport it to get that crispy crust.

Fr the mac and cheese I use a lil bit of frozen butternut squash puree (99 cents!) in place of 1/2 the mascarpone… and if you want to avoid so much dairy Tofutti cream cheese and parmesan (or nutritional yeast) mixed together make an excellent sub for the other 1/2 of the cheese.

Oyster po- boy with TJ’s frozen langostino tails coated in panko and egg/almond milk mixture was fun and cheap too….
